Reporting to the Chef De Cuisine, the Chef De Partie is responsible for planning, preparing, setting up and providing quality service in all areas of food production for menu items and specials in the designated outlet in line with standards and plating guide specifications. The Commis Cook also maintains organization, cleanliness and sanitation of work areas and equipment.

Core Responsibilities:

  • Prepare and produce all hot dishes for buffet and a la carte menu according to prescribed recipes and specifications
  • Ensure portion size, quality and presentation of the dishes conform to The Ritz-Carlton standard
  • Determine required mise-en place according to business levels
  • Prepare store requisitions for approval and ensure received goods meet predetermined quality and purchasing specifications
  • Ensure workstations are clean and hygienic and operating equipment are in good working conditions
  • Ensure safety procedures are observed at all times to SGS and hygiene standards

The Ideal Candidate:

  • Good command of English in both verbal and written communication
  • Certificate of culinary training or apprenticeship
  • Prior experience in a luxury hotel is an advantage
  • Confident with a pleasant disposition and well groomed
  • Able to work under pressure and on rotating shifts
